Backpacking - Requires no planning. Just hop on a public transport that will take you out of the city and get down wherever you feel like. Meet random people, roam around enjoy the nature, the place, the people, spend the day as it unfolds, check local food, accommodations without worrying about the next day, the next destination. There's no specific end date either.
Packaged Tour - Depending on the destination, planning may start as early as six months in advance, fixed dates, fixed plan for every day, every meal and every sightseeing, you be always with the group, hardly any interaction with locals but the tour operators will make you feel like an important person with full attention, no time for random excursions, the end date is also fixed.
Play dates, planned lunches/dinners are like packaged tours. I prefer backpacking.
I'm glad that at least few houses give us the backpacking experience!
